Using The Science of Nutrition: Debunk the Diet Myths and Learn How to Eat Responsibly for Health and Happiness by leading nutritionist Rhiannon Lambert as our guide, we’ll investigate how food truly fuels our bodies, minds, and lives.

Over 15 weeks, students will dive into essential topics such as macronutrients, micronutrients, gut health, weight management, plant-based diets, and how food affects mental health and immunity. Rather than rely on tests or memorization, students will demonstrate learning through creative projects: designing meals, building infographics, making short videos, and crafting evidence-based food guides. The course culminates in a personalized capstone project synthesizing what they’ve learned into a meaningful nutrition resource for themselves or their community.
